Verdicchio is seeking a sophisticated, high-energy, and detail-oriented Junior Front of House (FOH) Manager to join our elite hospitality team. This role is tailored for an aspiring hospitality professional looking to step into management within a premium, high-end dining establishment.
Under the guidance of the Senior Management team and Sommelier, you will ensure the flawless execution of daily fine-dining operations, maintain impeccable service standards, and elevate the overall guest experience. A key component of this role includes supporting the management of our extensive, world-class wine collection and ensuring our beverage service aligns with our culinary standards.
Elite Service Excellence: Ensure the highest standards of premium hospitality are met consistently by all floor staff, maintaining an atmosphere of sophisticated, seamless service.
Active Floor Presence: Maintain a highly visible and engaging presence on the floor during service peaks, seamlessly greeting high-profile guests, regular patrons, and corporate clients.
Guest & VIP Relations: Handle guest inquiries, feedback, and special requests with the utmost discretion, professionalism, and diplomacy.
Reservations & Floor Logistics: Optimize table allocations and floor plans using high-end reservation systems to ensure smooth guest flow and maximize dining room efficiency.
Wine Service Support: Work alongside our Sommelier team to ensure proper wine presentation, correct glassware utilization, decanting protocols, and optimal serving temperatures.
Inventory & Cellar Management: Assist with the meticulous tracking, organization, and stock control of our large-scale, high-value wine holding and premium spirits.
Upselling & Pairing Culture: Foster a culture of beverage excellence on the floor, encouraging waitrons to confidently recommend wine pairings and premium beverage options.
Staff Supervision & Grooming: Supervise floor staff to ensure immaculate grooming, punctuality, and behavioral standards that align with a luxury dining brand.
Pre-Shift Briefings: Conduct detailed pre-shift briefings covering daily culinary specials, high-value wine features, VIP guest preferences, and service focal points.
Mentorship: Help train and onboard waitrons and runners, focusing on refined service etiquette, menu depth, and basic wine knowledge.
Experience: Minimum of 2–3 years of experience in a high-end fine dining, luxury hotel restaurant, or premium wine estate environment (experience as a Senior Waiter, Sommelier assistant, or Shift Supervisor is highly advantageous).
Wine Knowledge: A strong foundational knowledge of wine is essential. Formal certifications (e.g., WSET Level 1 or 2, Cape Wine Academy, or equivalent) are highly preferred.
Systems: Proficiency with premium restaurant Point of Sale (POS) systems and advanced reservation platforms (e.g., Dineplan).
Education: Matric certificate (Grade 12). A qualification in Hospitality Management or Food & Beverage is a significant advantage.
Refined Demeanor: Impeccable presentation, polished communication skills, and the ability to interact comfortably with affluent clientele.
Passion for Wine & Gastronomy: A genuine appreciation for fine wine, premium spirits, and culinary artistry.
Composure Under Pressure: Ability to manage a high-volume, high-expectation floor while maintaining a calm, welcoming, and commanding presence.
Meticulous Eye for Detail: A habit of noticing the small things—from a slightly misaligned wine glass to a guest needing immediate attention.
